How an Odessa couple turned their food truck into a restaurant

It started out as a food truck, then turned into one of Odessa's most popular restaurants.

ODESSA, TX (KWES) - It started out as a food truck, then turned into one of Odessa's most popular restaurants. Curb Side Bistro just opened a couple of months ago right off on Andrews Highway and 38th Street. But how they started was from scratch.

Alejandro and Stephanie Barrientos met almost 14 years ago.

"We started basically with no money," said Alejandro. "We had a dollar and a dream."

They may have had small dollars, but they carried big dreams in their eyes. They opened up Curb Side Bistro, a food truck that puts an elevated meaning to comfort food. Their visions would later come to life and their food truck would no longer have to drive.

"Every idea we have, we pray about it," said Alejandro. "God will show us where he wants us. God showed me this building. I said, 'That's going to be our building one day.'"

"I said, 'You're crazy! That's an operating business right now," said Stephanie. "But God said it in his heart."

And with the previous business closing, it opened a new door to the married couple. The food truck turned into one of Odessa's well-loved restaurants, with one of a kind sliders like the Homer Simpson or buffalo chicken topped on french fries. It holds an eclectic style that brings all walks of life deep into their dishes.

"The vibe is chill," said Stephanie. "People spend hours here, hours! We make it feel welcome and homey."

"This is our dream," said Alejandro. "Welcome to everything we thought about. This is a collection of all the years of traveling and seeing different foods. It's inspiration from everywhere."

It's inspiration that goes to show the recipe to success, comes with a little bit of faith.

"This was meant for us," said the Barrientos. "God showed us, 'This is what I want you to do.' We would dream and see visions and everything designed. We knew it was Him."

Friday Mar. 30 is their last fish Friday, where you can catch their catfish platter and fish tacos. You can call in your order at (432) 272-0959 and pick it up at the window.

Curb Side Bistro opened in October and was already awarded with two awards for NewsWest 9's Best of the Basin for Best Burger and Best Family Restaurant this year.
