Turkey Cutlets Milanese Style With Pumpkin Polenta – 4 servings
1/4 cup extra-virgin olive oil (EVOO)
3 cups chicken stock
2 tablespoons butter
1 1/2 cups all-purpose flour
4 eggs
1/4 cup milk
2 1/2 cups breadcrumbs
A handful flat-leaf parsley
3 tablespoons grated Parmigiano Reggiano cheese
8 turkey cutlets
1 14-ounce can pumpkin puree
1 cup quick-cooking polenta
1 tablespoon honey
A pinch nutmeg
1 tablespoon fresh thyme leaves
3 cups arugula
1 handful of basil leaves
1/2 pint cherry tomatoes
1 lemon

Tuesday – November 13, 2007
Caramelized Cauliflower and Onion Soup – 4 servings
3 tablespoons extra-virgin olive oil (EVOO), plus additional
1 large onion
1 large head cauliflower
2 ribs celery
3 large cloves garlic
5 sprigs fresh thyme
6 cups chicken stock
1 fresh bay leaf
1/2 baguette
1/2 cup walnut halves
8 ounces gorgonzola cheese

Wednesday – November 14, 2007
Three Sides Make a Meal – 4 servings
 1 1/2 tablespoons extra-virgin olive oil (EVOO)
2 1/2 tablespoons butter
2 medium onions
2 pints Brussels sprouts
1 teaspoon (about 1/3 palmful) ground allspice
1 tablespoon sage
4 cups chicken or vegetable stock
1 small radicchio
1 cup whole milk
1 cup quick-cooking polenta
1 box frozen butternut squash
2 teaspoons honey
A dash freshly grated nutmeg
4 to 5 sprigs thyme
1/4 to 1/2 cup (about 1 to 2 handfuls) grated Parmigiano-Reggiano cheese
3 tablespoons extra-virgin olive oil (EVOO)
2 pounds mixed wild mushrooms such as cremini, shiitake and/or porcini
4 shallots
1 cup marsala wine
2 tablespoons chopped parsley

Thursday – November 15, 2007
Mighty Minestrone – 6 to 8 servings
2 tablespoons extra-virgin olive oil (EVOO)
1/4 pound pancetta
1 onion
4 cloves garlic
2 carrots, chopped or 1 cup store-bought, pre-shredded carrots
4 stalks celery from heart
1 fresh bay leaf
1 bunch kale
1 15-ounce can cannellini beans
1 15-ounce can chickpeas
2 sprigs rosemary
4 to 5 sprigs thyme
1 15-ounce can diced tomatoes
1 quart chicken or vegetable stock
1/2 pound whole wheat elbows
Shaved Pecorino Romano cheese
1 loaf crusty bread

Friday – November 16, 2007
Elsa's Beef & Burgundy – 6 to 8 servings
3 tablespoons extra-virgin olive oil (EVOO), plus additional
4 slices bacon
2 1/2 pounds sirloin or sirloin tips
1/3 bottle red burgundy wine
2 cups beef stock
1 package frozen pearl onions
2 teaspoon (about 1/3 palmful) sugar
5 tablespoons butter
1/2 pound mushrooms
2 tablespoons flour
1 teaspoon orange zest
1 pound wide egg noodles
A handful chives
